Dolce Vita Crème Brûlée Recipe
Ingredients
- 13 egg yolks or 480g
- 2 quarts heavy crème
- 2 cups sugar
- 1 cup Dolce Vita French Vanilla
Directions
- Begin by steeping Heavy cream, bringing to a boil and taking off the heat source.
- In a stainless-steel mixing bowl, place 9 egg yolks and whisks. Combine sugar and French vanilla. Mix until pale yellow and eggs begin to thicken.
- Temper egg mixture with hot cream, steady stream of cream and whisking continuously.
- Pour crème brûlée into ramekins and place in a hot water bath, cover with aluminum foil and place a hole at the corner of the pan so steam can escape. Bake at 350 for 30-45 min.
