Tulip Cookie Recipe

  • 2 cups unsalted butter
  • 2 cups powdered sugar
  • 2 cups all-purpose flour
  • 2 cups egg whites
  • Butter as needed
  1. Melt the butter and place in the bowl of a mixer fitted with a paddle. Add the sugar and blend until smooth.
  2. Add the flour and blend until smooth. With the mixer running, add the egg whites very slowly. Beat until blended, but do not incorporate air into the batter.
  3. Strain the batter through a china cap and set it aside to cool completely.
  4. Coat a sheet pan with butter or line with a silicone mat. Spread batter into 6inch circles. Bake at 400ºF until the edges are brown and dry, 12 to 18 min.
